Blackberry Pie Quinoa

Ingredients:

85 g (1/2 cup) quinoa

pinch of salt

cover dry quinoa with 1 cup cold water, cook till boil, add a pinch of salt and reduce heat. Cover and cook untouched for 12 minutes or until all water absorbs. Let sit covered for 10 minutes, then fluff with a fork. 

Blackberry jam:

 250 g (2 cups) fresh or frozen blackberries

60 g (1/4 Cup) coconut sugar

2 Tb chia seeds

1 tsp natural vanilla extract

Add blackberries to a pot and cook for a few minutes until they reduce some juice. Add coconut sugar, chia seeds and vanilla extract. Let boil, reduce heat and simmer for 10 minutes.

 

Divide cooked quinoa into 2 bowls, add a scoop of natural plant yoghurt of your choice, then add blackberry jam. Sprinkle with fresh lemon zest.
