Blueberry Pancakes

Ingredients:

75 g fresh or frozen blueberries (thawed)

1 large ripe banana

180 ml (3/4 Cup) milk of your choice

125 g (! Cup) almond meal 

80 g (3/4 Cup) oat flour

2 tsp baking powder

1 Tb chia seeds

1/4 tsp salt

 

to serve:

blueberries, coconut yoghourt, honey

 Blend all pancakes ingredients together. Heat a large pan with 1 tsp coconut oil. Pour about 1/4 cup of batter for each pancake. Cook on medium heat until the edges are dry. Flip and cook for 2 minutes more. Repeat with the remaining batter.
