1/2 cup cooked lentil
1 onion diced
2 cups of diced shiitake and button mushrooms
2 cups of spinach leaves
salt and pepper to taste
Cook polenta according to the instructions written on the pack.
While polenta is cooking, heat a large skillet with some cooking oil, add onion and cook on medium heat until tender. Add mushrooms and let them brown. Add spinach and season with salt and pepper. To serve pour some truffle oil on polenta.
