Creamy Broccoli Soup


1 onion peeled and dices

2 garlic cloves peeled and minced

1 big broccoli head cut into florets

2 big handful of spinach

500 ml (2 cups) of vegetable broth

70 g (1/2 cup) cashews

2 tsp salt

to serve: SAAPIO kale chips and tomato crackers

In a big pot heat some cooking oil, add onion and garlic and let cook on medium heat until tender.Add vegetable stock and broccoli. Cook for about 10 minutes, until broccoli is tender. Transfer everything to a blender. Add spinach, salt and cashews and blend until smooth.
